Echizen Washi

Yi-Da is said to be the best Japanese restaurant in Fukui. Every time people come from abroad, I recommend them to visit this restaurant. 

Eventually I go there twice a month and enjoy its seasonal meals. It's so popular that it might be difficult for you to make a reservation.

The chef is 43 years old but he opened his restaurant when he was thirty or so. Almost all people went against his plan for the location; too countryside and few would come. 

But he was born here and his father used to have his vegetable garden on that plot. But he passed away when his son was about to make his dream come true.

I like to visit this restaurant, listen to his philosophy learning designs from him in colors and decorations.
