Echizen Washi

Mr.Iida had the tenth anniversery of his restaurant in this village last year. He is now forty-two and still young and so much eager to learn how he creates good dishes.

But he rejects to be interviewed by any mass media, but his customers often tell their people about his restaurant, so it's said to be the most popular one in Fukui prefecture on the website.

He changes the menu every month and each dish has the season's color. To learn from his artistic design,  I try to visit his restaurant some time.
